Prep fresh and easy ingredients like sundried tomatoes and cannellini beans in the morning and just add hot water for quick soup in a jar.
Ingredients
- 3 sprigs fresh basil
- ⅓ cup Parmesan cheese
- 2 sundried tomatoes
- 2 anchovies in olive oil
- 2 tbsp tomato paste
- 1 cup cannellini beans
- 1 ½ cups chopped kale
- ½ cup sliced cherry tomatoes
Steps
- Remove leaves from 2 sprigs basil and grate the Parmesan cheese. Mince sundried tomatoes and anchovies.
- Set basil, Parmesan, half of the sundried tomatoes, and all of the anchovies in a blender. Top with tomato paste. Blend until mixture is smooth and transfer to a large jar. Drain and rinse the cannellini beans.
- Top mixture with cannellini beans, kale, tomatoes, remaining basil sprig, and sundried tomatoes. To make a fresh soup, simply add boiling water and stir.
