A shrub or drinking vinegar is a refreshing sweet and tart syrup that can be used to flavor water or cocktails. Try using it in marinades and salad dressings as well!
- 2 cups sliced strawberries
- 1 cup blackberries
- 1 cup blueberries
- 2 cups sugar
- 2 cups apple cider vinegar
- Bring berries, sugar, and 1 cup water to a boil in a large pot and reduce to a rapid simmer. Simmer, stirring occasionally, for 15 min. or until liquid has reduced by one third and is a deep red color. (Skim off any scum that accumulates at the top of the pot.)
- Add the apple cider vinegar and simmer on low for 5 min. Allow mixture to cool slightly before straining into a large glass bottle. Chill until ready to serve.
Flavor sparkling water with shrub to taste, and enjoy over ice.
