This classic potato salad is made with farm fresh eggs, potatoes, red onion, celery, and Miracle Whip. Ready in 25 minutes, it’s perfect for a picnic.
- 6 large eggs
- 1.5 lbs baby potatoes
- ½ (10 oz) pkg diced red onion
- 3 stalks celery
- ¾ cup light Miracle Whip dressing
- Place the eggs and potatoes together in salted boiling water and boil 10 min. Remove the eggs, and rinse under cool running water. Continue to boil potatoes for additional 5 min., or until fork tender. Meanwhile, peel the hard-boiled eggs and dice them. Set in a large bowl with the red onions. Slice the celery into ¼-inch pieces and add to the bowl with the eggs.
- When potatoes are cooked, drain and rinse under cold water. Dice the potatoes and add to the eggs. Add the Miracle Whip and gently fold until mixture is well combined. Season with salt and pepper to taste.
Add sliced green onions for extra bite.
