Canned corn and beans tossed with fresh cherry tomatoes and bright cilantro makes for an easy and portable salad in no time.
- 1 (0.5 oz) pkg fresh cilantro
- 1 pint cherry tomatoes
- 2 (15.25 oz) cans corn
- 2 (15.5 oz) cans black beans
- 1 tbsp chili powder
- Coarsely chop the cilantro. Halve the cherry tomatoes. Drain and rinse the corn and beans.
- In a large bowl, combine chili powder, cilantro, tomatoes, corn, and beans. Season with salt and pepper.
Serve with chips for scooping or as a side salad.
MAKE IT ZING! Add a squeeze of fresh lime juice.
