You’ll never know there’s no added sugar! Pitted dates bring sweetness to these protein-packed treats, making them a great choice for a snack on the go.
Ingredients
- 1 ¼ cups walnuts
- 2 cups pitted dates
- ½ cup sliced almonds
- 3 tbsp almond butter
- 2 tbsp coconut oil
- ¼ cup sunflower seeds
- 1 cup unsweetened coconut
Steps
- To a food processor, add the walnuts, dates, and almonds and pulse until the nuts are broken up and the dates form a sticky paste. Add the almond butter and coconut oil and pulse to combine.
- Add the sunflower seeds and ¼ cup of the coconut and pulse until just combined. Using a small ice cream scoop or rounded tablespoon, scoop and roll mixture into 1-inch balls, squeezing to form a tight ball. Place remaining coconut on a plate and roll balls in coconut, pressing to adhere. Place in a sealed container in the refrigerator until ready to eat.
