These fresh veggie snacks are as fun to assemble with kids as they are to munch on!
- 3 mini peppers
- 3 mini cucumbers
- 20 cherry tomatoes
- ¼ cup red pepper hummus
- 4 oz chive cream cheese
- Halve the cucumbers lengthwise and scrape out seeds. Halve the peppers lengthwise and remove seeds.
- Cut the tomatoes in half. With toothpicks, secure 4 tomato halves to each cucumber and pepper half to form wheels.
- Spoon or pipe the hummus and cream cheese into the peppers and cucumbers.
