A bacon blanket jazzes up lean chicken in this easy dinner that you’ll want to put in your weekly rotation.
- 8 (about 3 oz each) thin-cut chicken cutlets
- 8 slices bacon
- 1 tbsp olive oil
- 1 tbsp minced garlic
- 1 (8 oz) pkg spinach
- Preheat oven to 450°F. Line a rimmed baking sheet with foil. Season the chicken with salt and pepper.
- Wrap each piece of chicken with 1 bacon slice. Arrange on lined pan with the ends of bacon down. Bake 20 min., until bacon is crisp and chicken is cooked through.
- Meanwhile, in a 12-inch skillet, heat the oil on medium. Add the garlic and cook 1 min., stirring often. Add the spinach and cook 5 min., until just wilted. Season with salt and pepper to taste. Serve chicken over spinach.
