This fresh and versatile green sauce pairs beautifully with pork chops, but it’s also delicious spooned over grilled chicken, shrimp, or fish.
Ingredients
- 4 (about 1 ½ lbs) thick-cut boneless center-cut pork chops
- 1 ½ cups packed basil leaves
- 1 cup packed parsley leaves
- 2 tbsp capers, drained
- 2 anchovy fillets
- 1 clove garlic
- ½ tsp crushed red pepper
- 2 tbsp lemon juice
- ½ cup olive oil
Steps
- Set half of grill to medium and half to medium-high.
- Season the pork chops with salt and pepper. Grill pork 2 min. per side on hotter side of grill, until grill marks appear. Move pork to cooler side of grill and cook 4–5 min. per side, until an instant-read thermometer registers 145°F. Remove from grill and let stand 5 min.
- Meanwhile, to a food processor, add the basil, parsley, capers, anchovies, garlic, and crushed red pepper. Pulse until very finely chopped. Transfer to a medium bowl and stir in the lemon juice and oil. Season with salt and pepper to taste.
- Thinly slice pork and drizzle with herb sauce.
