Rotisserie chicken and store-bought guacamole make these wraps a quick and easy light lunch or hearty snack.
Ingredients
- 1 large red bell pepper
- ½ cup prepared guacamole
- 4 (8-inch) flour tortillas
- 4 slices Monterey Jack cheese
- 2 cups shredded rotisserie chicken
Steps
- Remove the seeds and thinly slice the bell pepper.
- Spread 2 tbsp guacamole onto each tortilla. Top with the cheese, then chicken and bell pepper. Roll up each tortilla like a pinwheel and serve.
