Thin skirt steak grills in under 10 minutes and pairs perfectly with a mint, cilantro, and garlic sauce. Microwave a side of frozen prepared farro for a complete meal in less than 30 minutes.
Ingredients
- 1 (1 ½ lb) skirt steak
- 1 cup packed cilantro leaves
- ½ cup packed mint leaves
- 1 clove garlic, minced
- ¼ cup olive oil
- 2 tbsp red wine vinegar
- 1 (10 oz) bag SteamReady Southwest Style Vegetable and Farro Protein Blend
Steps
- Heat grill or grill pan to medium-high. Season the steak with salt and pepper. Grill steak 3–5 min. per side for medium. Transfer steak to a cutting board and let stand at least 5 min.
- Meanwhile, to a blender or food processor, add the cilantro, mint, garlic, oil, and vinegar. Pulse until combined but not completely smooth, adding 1–2 tbsp water as needed. Season with salt and pepper to taste.
- Microwave the farro mixture according to package directions. Slice steak against the grain. Spoon herb sauce over steak and serve with farro.
