These colorful and flavorful chicken salad sandwiches are a perfect way to use fresh cherries in a savory recipe.
Ingredients
- 2 ½ cups rotisserie chicken, shredded
- ⅓ cup finely chopped celery
- ⅓ cup chopped red apple
- ¼ cup light mayonnaise
- ¼ cup nonfat Greek yogurt
- 2 chopped tbsp fresh parsley
- 1 tbsp apple cider vinegar
- ½ cup fresh cherries, pitted
- Croissants or whole-wheat bread, to serve
Steps
- In a medium bowl, combine the chicken, celery, apple, mayonnaise, yogurt, parsley, and vinegar. Season with salt and pepper. Mix well to combine. Gently stir in the cherries.
- When ready to serve, halve each croissant, if using. Divide chicken salad among croissant halves or bread slices.
