Ingredients
- 1 (8.8 oz) pkg Nature's Promise® Precooked White Quinoa
- 1 (16 oz) pkg mixed fresh fruit such as cantaloupe, honeydew, grapes, and blueberries
- 2 limes
- 1 (16 oz) pkg strawberries, sliced to yield 2 cups
- ½ (0.5 oz) pkg Nature's Promise® Mint, finely chopped
Steps
- Microwave quinoa according to package directions. Transfer to a large serving bowl and allow to cool, about 5 min. Meanwhile, if needed, cut the mixed fruit into bite-size pieces.
- To bowl with quinoa, add the zest of both limes, plus the juice of 1 lime. Add the strawberries, mint, and chopped fruit. Toss until thoroughly combined.
